Pseudo Stuffed Peppers

We had wild rice on Sunday and I needed to use up the rest before it went bad.  I also had some red and yellow peppers, so I thought of stuffed peppers!  However, I know I would be the only one eating them and I don't like to store them.  So I chopped up the peppers and added them to my rice and ground beef.  My mom always made these with cheese, but I left it out and they taste great!  Now I have lunch the rest of the week!

1 lb ground beef browned
1-2 bell peppers
2 cups cooked rice
salt/pepper to taste

Add everything in a pan and cook until warmed and peppers are softened.
