Mini Omelettes
5 large eggs 1/4 cup milk 1/2 teaspoon salt dash of pepper shredded cheese to taste 2 tablespoons each: diced green pepper; diced tomatoes; cooked, crumbled bacon or cooked, diced ham
1. Preheat the oven to 350°F (176°C). In a medium bowl, mix the eggs, milk, salt, and pepper.
2. Coat 6 cups in a muffin tray with nonstick spray and pour in the egg mixture evenly. Distribute the cheese and toppings on top of the egg mixture. Bake for 25 minutes or until the edges are golden brown.
