Brown Sugar Muffins
1/2 cup butter 1 cup brown sugar 1 egg 1 cup milk 1/4 teaspoon vanilla 2 cups flour 1/4 teaspoon salt 1 teaspoon baking soda 1 cup fresh or thawed blueberries 1/4 cup chopped nuts (optional)
1. In a medium bowl cream the butter and sugar together. Mix in the egg, milk, and vanilla. Sift in the dry ingredients and stir. Fold in the blueberries and nuts.
2. Pour the mixture into muffin tins coated with nonstick spray. Bake at 375°F (190°C) for 15 minutes. Makes about 18 muffins.
