Combine in a saucepan:
4 c uncooked INSTANT rice
5 c milk
1/2 tsp salt
1/2 tsp cinnamon
1 c sugar (I do 3/4 and it still tastes ok)
1/2 c raisins (craisins)
Other ingredients
4 eggs
1 tsp vanilla
Combine saucepan ingredients. Stir constantly until ingredients reach rolling boil. Reduce heat, boil slowly for 15 min. or until starts to thicken, stirring occasionally.
Slowly pour hot mixture into 4 slightly beaten eggs.
Beat vigorously and add 1 tsp vanilla. Sprinkle with nutmeg.
Cool 10 minutes before eating or wait until it is cold. (This also cooks the eggs, so it is important to let it sit before eating.)
