Blueberry Muffins (Gluten, Dairy, Sugar Free)

My sister Kathryn made these:

1/2 cup Coconut Flour
1/2 tsp. Salt
1/2 tsp. Baking Soda
6 eggs (replaced it with 3 bananas)
1/3 cup agave or honey (I omitted this due to sweetness of coconut flour and bananas)
1/3 cup oil
1 Tbsp Vanilla (check ingredients on vanilla - sometimes they will add additional ingredients)
1 cup Blueberries (frozen or fresh)

1. In a small bowl combine flour, salt and baking soda
2. In a large bowl combine eggs (banana or applesauce), oil, vanilla, and agave (if you so choose to).
3. Combine dry ingredients with the wet ingredients
4. Add blueberries and stir (to prevent blueberries from dropping to bottom, dust them with some coconut flour)
5. Place in muffin cups
6. Bake at 350degrees fro 20-25 minutes
Yields 12 muffins

I cooked mine in mini muffin pans. To make the cup liners, I cut up some coffee paper filters I found. I also made them in a mini bundt pan. I just cut up coffee filters to line these as well. To make it more fun, I also added some unsweetened coconut flakes I recently purchased. It added a nice crunch for a topping.

Mimi's Buttermilk Spice Muffins

Muffin Batter:
1 cup granulated sugar
1/2 cup butter or margarine
3 eggs
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup plus 1 tablespoon buttermilk
Nut Topping:
1/2 cup granulated sugar
1 cup walnuts, chopped
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

DIRECTIONS: Heat oven to 375 degrees F
Batter:
In a mixing bowl, cream the sugar and butter together with an electric mixer. When thoroughly mixed, add eggs and beat one more minute. Sift the flour into a separate bowl together with the baking soda, nutmeg and cinnamon. Add flour and buttermilk to the first mixture. Mix at low speed until smooth. To avoid lumps in the batter, add the wet and dry ingredients alternately, in small amounts.Grease muffin tins with additional butter or margarine. You can also use paper baking cups. Fill each cup 3/4 full of batter.
Nut Topping:
Mix all ingredients together in a small bowl. The nuts should be finely chopped.

Add a full rounded tablespoon of nut topping on top of the batter in each cup. Bake immediately or the topping will sink to the bottom of the muffin.

Bake for 20 to 25 minutes, until golden brown. A wooden pick inserted in the middle of the muffin should come out dry.If using jumbo muffin pans, reduce the oven temperature by 25 degrees F and increase the baking time 5 to 10 minutes.

Easy Morning Glory Muffins

2 cups all-purpose flour
1 1/4 cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups shredded carrots
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup unsweetened flaked coconut
1 apple - peeled, cored and shredded
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

NOTES: You can replace the 1 c of oil with 1/4 c oil and 3/4 c applesauce to lower the fat content.

You could also add 1/4 c raisins or 1/4 craisins. (I would boil them in some water beforehand to plump them up a little bit.)

Disneyland's Pumpkin Muffins w/Cream Cheese Frosting

Pumpkin Muffins:
2 cups pumpkin purée (canned)
1½ cups granulated sugar
3 large eggs
¾ cup canola oil
1½ tsp. vanilla extract
1 cup all-purpose flour
¾ tsp. salt
1½ tsp. baking powder
¾ tsp. baking soda
¾ tsp. cinnamon
¾ tsp. ground cloves
¼ tsp. ground nutmeg
½ cup raisins

Preheat oven to 325ºF.
In a large mixing bowl, whisk together pumpkin, sugar, eggs, oil and vanilla until well blended.
Sift together flour, salt, baking powder, baking soda, cinnamon, cloves and nutmeg over the pumpkin mixture and whisk until just blended. Over mixing may result in less tender muffins.
Fold in the raisins until consistently distributed.
Portion mixture into muffin pans and bake at 325ºF for 25 minutes.
Insert a toothpick into center of muffin and remove. If toothpick is clean, the muffins are ready. If not, allow muffins to cook an additional 1-2 minutes or until toothpick is clean.
Allow muffins to cool for 30–60 minutes.

Cream Cheese Icing:
1 cup unsalted butter
1½ cups cream cheese
1 tsp. vanilla extract
2 cups powdered sugar
½ tsp. cinnamon
Allow cream cheese and butter to soften at room temperature for about an hour.
Mix cream cheese and butter together until smooth.
Add vanilla extract, powdered sugar and cinnamon, and mix until well blended.
Remove from mixer, and cover and refrigerate until needed.
Fill a pastry bag fitted with a star tip with icing. Poke a hole into the center of each cooled muffin and squeeze icing directly into the middle of the muffin, finishing with a rosette on the top.

Special Tip: This recipe makes a generous amount.
