Basic BBQ Recipe

We tried this with leftover turkey and it was GREAT! Put it in the crockpot all day and shred it at night for BBQ sandwiches. I just added all the ingredients to the pot and cooked it all day. (I also halved the garlic for my personal taste)

2 (4 pound) whole chickens, turkey, beef, pork
1 1/2 cups ketchup
3/4 cup prepared mustard
5 tablespoons brown sugar
5 tablespoons minced garlic
5 tablespoons honey
1/4 cup steak sauce
4 tablespoons lemon juice
3 tablespoons liquid smoke flavoring
salt and pepper to taste
8 hamburger buns

Place chicken in a large pot with enough water to cover. Bring to a boil, and cook until chicken comes off the bone easily, about 3 hours. Make sauce while the chicken cooks.

In a saucepan over medium heat, mix together the ketchup, mustard, brown sugar, garlic, honey, steak sauce, lemon juice, and liquid smoke. Season with salt and pepper. Bring to a gentle boil, and simmer for about 10 minutes. Set aside to allow flavors to mingle.

When the chicken is done, remove all meat from the bones, and chop or shred into small pieces. Place in a pan with the sauce, and cook for about 15 minutes to let the flavor of the sauce soak into the chicken. Spoon barbequed chicken onto buns, and top with coleslaw if you like.

Cheese Crisp

You can make these as "gormet" or simple as you like. My boys will eat half of their cheese so it ends up being just a "crisp".

1 tortilla shell
1/4 c shredded cheese
slice of ham
leftover steak
leftover grilled chicken
diced green chillis
olives
tomatoes
guacamole
sour cream
salsa

Turn griddle to low. Place tortilla on the griddle and put cheese on. Put your favorite toppings on. You can fold it in half or eat open faced.

Beef Stew

Brown 2 lbs stewing meat

Add:
4 c hot water
1 tsp lemon juice
dash garlic salt
1 medium onion
2 bay leaves
1 TBS salt
1/2 tsp pepper
1 tsp sugar
1/2 tsp paprika

Stir for 1 hour stirring occasionally. Add to this:
6 carrots, cut in large pieces
4 medium potatoes, quartered
1 pkg frozen peas
2 onions, quartered

Continue to cook 20-30 minutes or until the veggies are done. Could be done in a crock pot as well and just simmer all day after browning stewing meat.

Beef Stroganoff

I cook this in my crock pot and it smells WONDERFUL!

2 lbs of stewing meat
1 envelope onion soup mix
1 can cream of mushroom soup
1 cup sour cream
1 cup or can Mushrooms (optional)
Rice or noodles cooked

Place the meat, soup mix and soup in the crock pot. No need to stir. One hour before serving, add mushrooms and sour cream.

Also wonderful over toast the next day.
