This makes a batch for 1 week for me.
1 teaspoon oil
1 onion, chopped
3 cloves garlic, peeled and chopped
2 cup uncooked quinoa
4 cups vegetable broth (Costco Paradise Chicken Broth is Gluten Free & the cheapest)
2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels (optional)
1 (15 ounce) cans black beans, rinsed
and drained
1/2 cup chopped fresh cilantro
- Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. (about 3-5 minutes). Add the cumin and cayenne pepper and let it soak into the onions & garlic.
- Stir in the quinoa into the saucepan and cover with broth. Cover, reduce heat, and simmer 20 minutes,
- Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro when there is no more liquid and serve.
This is really good with chicken, in burritos, with guacamole, salsa and with chips!
