Old Family Favorites Mixed with My New Gluten/Dairy/Sugar Free Diet!

Aunt Vi's Carrot Cake
1 3/4 c sugar
1 1/2 c oil
4 eggs (add yolks first and fold in beaten egg whites)
1 tsp salt
2 tsp soda
2 c flour
2 tsp cinnamon
3 c shredded carrots
Mix all ingredients and fold in egg whites. Bake 45 min at 375 oven.
