Chicken Fried Rice

Great side dish!

2 eggs
1 TBS butter
1/2 onion
2 TBS soy sauce
1 TBS water
1 TBS oil
2 c cooked rice, cold
1 tsp black pepper
1/2 c frozen peas
1 c cooked chicken

In a small bowl, beat egg and water. Melt butter in large skillet over medium heat. Add egg and leave flat for 1-2 minutes. Remove and shred.
Heat oil in large skillet and add onion. Cook until softened. Add rice, soy sauce, pepper, chicken and peas. Stir fry for 5 minutes then stir in egg. Serve hot.
