I made this for my sister and omitted the butter, brown sugar and cornstarch and it was fine. You could do this in a crock pot as well, putting the yams on the bottom to cook and apples up on top.
4 large yams
3 TBS butter
1 TBS cornstarch
1/2 c brown sugar
1 1/2 c apple juice
1 TBS lemon juice
1/2 tsp ground cinnamon
1/2 tsp ground allspice
3 large apples, peeled, cored and sliced
Cranberries (optional)
Place yams in a saucepan and bring to a boil. Cook 30 minutes. Drain, peel and cut into 1/3 inch slices
Preheat oven to 375, lightly grease a 9x13 pan.
In a small saucepan over medium heat, melt butter with cornstarch and brown sugar. Mix in apple juice, lemon juice, cinnamon and allspice.
Alternate layers of yams and apples in baking dish. Pour apple juice mixture over layers.
Cover and bake 1 hour. Remove cover and continue baking 30 minutes basting frequently so it does not dry out.
