Very simple granola to make. Good over yogurt (so I am told), plain or with milk. You can add any type of nut to equal 3 cups. If you want to add dried fruit, do it after baking so you do not dry out the fruit even more.
4 cups rolled oats
1 cup sliced almonds
1 cup chopped pecans
1 cup raw sunflower seeds
1/3 cup canola oil
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
Preheat oven to 300 degrees
In a large bowl, stir oats, nuts and sunflower kernels together. In a separate bowl, mix together oil, honey, vanilla and cinnamon; combine and mix the two well. Spread onto two ungreased baking sheets.
Bake for 10 minutes, remove and stir. Return to oven and continue baking until golden (about 10 more minutes). Remove and let cool completely before storing.
